60 % of Dishes in “Italian” Restaurants are Falsifications
Academy of the Italian cuisine informs, that on the average six of ten Italian dishes prepared at restaurants outside Italy, have no anything common with authentic ones except for the name.

According to received data, in 60 % of cases the Italian national cuisine abroad represent incorrect and rather unsuccessful variant, and only in 40 % of cases it is presented in “good interpretation”.

Experts see the reason of the developed situation that almost half of the cooks working in Italian restaurants abroad are not Italians on a nationality, and only 9 % from them have culinary schools, training or practice in Italy.

According to Academy of the Italian cuisine, most of all “counterfeit” Italian dishes are in restaurants of USA, Canada and Australia. Thus as it is marked in the report of Academy, in Russia and China they most strictly follow receipts of national Italian dishes.

In an original rating of “fakes” pizza is the leader, and after it tiramisu and lasagna follow.

Use of Products Rich with Magnesium, Interferes Development of Insult
Finnish scientists by results of scale research with participation of 26 thousand smoking men have come to this conclusion.

Men in the age of 50–69 years, who not suffered earlier insults participated in the research. Scientists from Carolina Institute registered their weight, growth, parameters of arterial pressure, and also data about their diet. Supervision over participants was conducted within 13,5 years. During this period an ischemic insult has been diagnosed at 2702 person. Also 579 person have transmitted hemorrhagic insult.

Having analyzed data, scientific have found out, that at men used the greatest quantity of magnesium (about 589 mg a day), the risk of an ischemic insult was on 15 % below, than at those who used its least quantity (373 mg a day).

The mechanism of protective action of magnesium on brain cells precisely is not known. In opinion of scientists, this effect can be caused by decrease of arterial pressure at the use of the food rich with a microcell. It is supposed also, that magnesium can influence cholesterol level.

Scientists from Northern Dacota University spent experiments on rabbits and came to the conclusion above.

Previous researches have shown, that surplus of cholesterol makes hematoencephalic barrier more nontight, increasing risk of senile dementia development.

hematoencephalic barrier is a filter between blood and the central nervous system, it protect brain from toxins and microbes which have got in blood vessels.

Researchers under direction of Jonathan Geyger fed rabbits with food of high cholesterol maintenance. Besides some animals daily received water containing 3 mg of caffeine (that is equivalent to one cup of coffee). After 12 weeks, hematoencephalic barrier of rabbits received caffeine has appeared much more strongly, than at their colleagues, who used usual water.

Scientists are Afraid of Tuna Extinction
Tuna has appeared under threat of extinction because of Europeans and Americans love to sushi. The meeting of scientists with representatives of 13 countries consuming most of all of tuna took place in Japan.

The basic problem became the constant excess of quotas on fishing which is caused by a growing demand for components for sushi. Especially seriously this demand has grown after a plenty of the fast food restaurants specializing on the Japanese cuisine appeared in the world.

The additional complexities for Japan are created the increasing population of China: Chinese consumers buy a high-quality tuna at prices which are too high for Japanese.

In Europe and USA there are frequent complaints of restaurants visitors to an indisposition after the use in food of badly prepared dishes of the Japanese cuisine. Representatives of JR Organization which is engaged in promotion of the Japanese restaurants outside the country have promised to allocate means and experts for improvement of cooks’ professional skill.

Representatives of USA in the International Commission on Preservation of the Atlantic Tuna consider that a temporary interdiction on tuna fishing is a unique output from the developed situation.
