Galliano — an alcoholic drink created in 1896 by Italian distiller Arturo Vaccari, by blending local and exotic ingredients such as star anise and vanilla.Galliano is a bright yellow color and is packaged in a distinctive tall bottle shaped roughly like the Eiffel Tower. Because the flavor is so exotic and unusual, it can be difficult to mix with other liqueurs. It is often used to make Harvey Wallbangers. Interestingly, it makes a delicious combination with triple sec, irish cream and milk in a variant of the Screaming Orgasm. Garam masala — the blend of “warm” spices. There are many variations of garam masala and it can contain up to twelve spices. Some of the spices can be cardamon, coriander, cumin, black pepper, cloves, cinnamon, and nutmeg. Gelatin — jelling substance of animal origine, having no taste and flavor, colorless or slightly yellow. It is used for making molded desserts and salads, for thickening cold soups and for glazing chilled dishes. Grenadine — a non-alcoholic red syrup made from pomegranate juice and sugar. It is used as an ingredient in cocktails, both for its flavor and to give a pink tinge to mixed drinks. It is commonly used to mix «cherry» Coca-Colas, and to flavor soaked cherries, making them bright red. These are in turn often used in fruitcakes. Grill — 1. A metal grate for cooking products over open heat source. It is set directly over hot coals, gas, hardwood or other heat source. 2. Method of cooking products on grill. Sometimes the products are cooked between two heat sources: the food is placed on grill, and salamander is set above. Syn. barbeque. Guacamole — popular Mexican dish, served as sauce or garnish, made of mashed avocado with various seasonings, mostly red pepper and chili. Often it is made with chopped tomatoes, coriander leaves, green onion. Guacamole should be placed in an air tight container immediately after cooking, to avoid discoloring. Gumbo — well-known dish in America, resembling thick spicy soup or stew. It is made of various vegetables (okra, tomatoes, onion, sweet pepper), meat and seafood (chicken, sausage, ham, shrimps, crabs). The key gumbo component is okra, making the gumbo’s consistency sticky and thick. |
