Soak gelatin in the milk until plumps, add sugar, coffee and heat over water bath until the gelatin melts. Strain the mixture, add crushed chocolate, heat the mass through, stirring, until the chocolate melts. Cool, but not until set.
Whip cream until stiff foam.
Whisk the chocolate mass in a processor until stiff foam, fold the whipped cream in (reserve some cream for decoration). If ther mass is not foamy enough, whisk it again.
Crush wafers in the processor, mix with nuts. Put the masses in tall glasses, alternating them, top with whipped cream and serve.
