1/6 lb. sorrel
1/6 lb. spinach
1 boiled potato
2 tbsp. spring onion chopped
1 cucumber
1 boiled egg
2 tbsp. sour cream
2 tsp. sugar
salt to taste
Directions:
Dice the boiled potato and fresh cucumber. Shred the spinach and sorrel, simmer in salted water separately, cool and pure. Blend the green purees, add 1 cup of cool water, add potato, cucumber, onion, sugar, salt and stir up.

Pour the soup in plates to serve, add an egg half in each plate and sprinkle with chopped greens.
