Mash the boiled carrot and cottage cheese through a sieve.
Plump the dried apricots, chop, mix with the cottage cheese mass, add semolina, butter, egg yolks, sugar, stir up. Then fold in the beaten up egg whites.
Grease a baking pan and sprinkle with dried breadcrumbs. Put the mass in the pan and bake in the oven, or steam if desired.
Serve the pudding with sour cream.
