1 3/4 lb. watermelon
1/2 cup wheat flour
2 cups vegetable oil
1/2 cup starch
Directions:
Cut water-melon, separate the pulp from the skin, remove seeds.

Whisk whites with sugar, mix with starch dissolved with a dollop of water.

Slice the pulp, cover with flour, dip in egg mixture, then deep-fry.

When serving, season the water-melon with powdered sugar.
