½ lb (250 g) frozen crabs, fillet
1 cucumber
2 tbsp cider vinegar
2 tsp lemon zest
3 tbsp vegetable oil
parsley greens
ground pepper
salt
Directions:
Defrost the crab flesh at room temperature. Warm up with some salted water, chill and slice.

Halve along the cucumber, seed and slice.

Combine the vinegar, salt, pepper, sugar, lemon zest and vegetable oil.

Mix the sauce in the crab and cucumber mixture and leave to stand for 1 hour.

Sprinkle with the chopped greens before serving.
