Shred carrot and sautee in oil.
Cut tomatoes and potatoes into slices. Break cauliflower into florets.
Soak beans in cold water for 3-4 hours, changing the water from time to time.
Soak prepared beans with water, cook until done, add potatoes and cook for 10 minutes. Then put carrot, cauliflower and cook for additional 10 minutes.
At the end of cooking, put peeled tomatoes. Salt the soup and pepper.
When serving, season the soup with chopped greens.
