4/9 lb. spinach
1 bulb onion
2 tbsp. dry white wine
2 cups chicken stock
1 cup cream
2 yolks
2 tbsp. olive oil
1 pinch nutmeg ground
1 pinch cayenne pepper ground
black pepper ground, salt to taste
Directions:
Chop onion, fry in oil.

Cut spinach leaves, mix with onion and fry a little.

Pour wine and stock, cook for -8 minutes.

Blend vegetables with stock until puree.

Add yolks whisked with cream.

Salt and pepper the soup, add nutmeg and cayenne pepper.

When serving, season the soup with chopped greens.
