Cook mussels for 5 minutes, cool and take out of the shells.
Cut squids into rings, cook in salted water for 2 minutes, cool and mix with the mussels.
Clean shrimps, cook through for 2 minutes in salted water, cool. Then score from breasts until tails and turn out, shaping butterflies.
To prepare the sauce, mix lemon juice with oil, add minced capers, minced garlic, salt and pepper.
Put prepared ingredients on a platter, pour with the sauce and refrigerate for 3 hours.
When serving, top the starter with green bunches.
