1 lb crawfish tails
7 oz slab bacon
1 1/2 cup sunflower-seed oil
7 oz almonds
Batter:
1 cup flour
3 eggs
1/2 - 2/3 cup water
salt to taste
Directions:
Cook crayfish necks in salted water, cast in a colander.

Mix flour with eggs, salt, a part of water and stir the batter, adding water step by step.

Turn each crayfish neck in thin lard slice, stick with picks, dip in prepared batter, place in heated oil and fry until golden.

When serving, take picks away and cover the rolls with minced almonds.
