5 oz stale white bread
3 tbsp water or milk
1 onion
1/2 cup dried crusts
1/2 cup vegetable oil
salt, ground black pepper to taste
1 lb scallop muscle
Directions:
Cut muscles across fibers into circles and put in salted water for 5 minutes. Soak bread in milk or water, mince flesh, add bread, chopped onion stir up and mince again.

Shape cutlets, cover them with breadcrumbs and fry in oil both sides. Then cook through the cutlets in oven for 5-7 minutes.

When serving, pour the cutlers with melted butter or tomato sauce. Garnish them with fried potatoes or cooked vegetables.
