Products Needed:
1 oz carrot 1 oz apples 1 1/2 cup water 1 oz xilite or sugar 1 tsp gelatin 1/2 tsp lemon juice

Directions: Soak gelatin in cold water.
Slice carrot, pour with hot water, cook until half-done, add sliced apples and cook until done. Mix a part of the broth with sugar, add lemon juice and bring to boil.
Mash carrot and apples with the remaining broth, then mix with prepared syrup, add gelatin and heat until the gelatin melts.
Cool prepared mass until it firms up a little, then whisk, pour in ramekins and cool.
Before serving, dip the ramekins in hot water for some seconds and place the mousse on a platter.
