Products Needed:
1/2 lb pitted apricots 2/3 cup water 2 tbsp cream 2 tbsp sugar

Directions: Pour apricots with hot water, cook until they soften, then mash through a sieve.
Whisk cooled cream with sugar until thick froth.
Put the apricot puree in ramekins, top with prepared cream and cool.
