Products Needed:
2 1/5 lb. flesh veal 9 1/2 tbsp. butter 1 egg 4/9 lb. bun parsley greens salt to taste

Directions: Mince veal.
Whisk in egg in the whipped butter, add grated bread, forcemeat, salt, chopped greens and stir well up.
Shape dumplings and cook in salted water until done. Serve with pungent sauce, garnishing with cooked vegetables.
