Prepare the dough. Whisk egg yolks with sugar and whisk in carefully whites and flour, mixed with starch.
Peel apples, cut into slices, put in greased and covered with breadcrumbs mold. Put over a half of dough, season with cocoa, then top with the remaining dough.
Bake the cake in oven. Turn prepared cake apples up. Cool and top with whisked cream.
