Cream butter with a half of sugar, mix with cream, egg yolks, grated lemon zest, pour aerated flour and make the batter. Before baking, add one whisked white. Then bake the pancakes.
Peel and cut thinly apples, season with sugar and simmer in a dollop of water until soften.
Interlay pancakes with apples. Whisk the remaining whites with sugar, pour pancakes, then bake in oven until golden.
