Cut potato into stripes, shred spring onions and garlic. Mince the liver.
Sauté potato, onion and garlic for 10-15 minutes. Add minced liver, salt, mix, then cover and stew until done.
Whisk eggs, salt and pour them onto the potato mixture. Fry for another 5 minutes.
When serving, turn the pan over and put the casserole on the dish and cut into portion size slices.
