Cut washed pork shin into chunks and boil them over strong heat for 5 minutes, drain the broth then. Pour the meat with little cool water, add chopped onion and vodka and stew, covered, for 40 minutes over strong heat, skimming foam from time to time. Add soy sauce, season with salt and sugar and stew for 30 minutes more.
Garnish the meat with greens when serving. Side with boiled rice.
