Mix flour with egg salt, eggs, 2 tablespoons water and knead dough. Let it sit for 30 minutes, roll out then and cut into squares 3x3 inches (8x8 cm).
Cut apricots into halves and pit.
Put a half of an apricot on each dough square, brush the edges with egg white. Fold the squares diagonally and pinch or crimp the edges. Deep fry the turnovers until golden.
Serve the turnovers hot.
