7 oz (200 gm) beef tongue
1 tsp soy sauce
2 tsp white wine
1 onion
1/2 tsp ground ginger
1/2 tsp each ground anise seeds, cinnamon and cloves
salt to taste
1 pickled cucumber
1 tbsp olives
parsley greens
Directions:
Pour washed beef tongue with hot water, add spices, soy sauce, wine, onion and salt. Boil in simmering water until ready. Plunge the ready hot tongue in cold water and peel.

Slice the tongue before serving and cool.

Garnish with pickled cucumbers, olives, top with greens.
