16 slices rye bread
1 onion
4 egg yolks
10 field mushrooms
3 tbsp heavy cream
1 tbsp butter
salt, pound white pepper to taste
3/5 lb canned salmon in oil
Directions:
Mince onion and saute in butter until golden.

Mix salmon fillet with onion and yolks, blend until homogeneous.

Chop mushrooms, fry in butter and mix with fish.

Then add whisked cream and stir up. Salt and pepper.

Before serving, put bread slices on lettuce leaves, put over the mousse and top with olives, lime slices, caviar and greens.
