Mix soy sauce, wine, chopped coarsely spring onion, chopped garlic, ginger, salt, pepper and 1 grated apple. Cover goose with this mix and let marinate for 2 hours.
Peel and core the rest apples. Put 2 whole apples inside the goose.
Grease baking tray, space apple circles on it and put goose over the apples back down. Bake the goose for 1 1/2 hour pouring with pot liquor from time to time.
Cut the ready goose into portions. Serve on a plate with baked apple circles. Garnish with greens.
