Cut mutton into 3-4 slices for one portion. Clean mutton kidneys and halve. Pepper all, salt, fry in butter until done.
Sautee onion rings and mix with meat.
Knead the dough of flour, water and salt, roll it out into layers over 0,04 inch thick and 10 inches in diameter. Bake pita on frying pan. Put rolled pita on a plate, tie with spring onion, fill in with prepared roast.
Garnish with fried tomato slices, top with greens.
