1 lb (480 gm) flounder fillet 4 eggs 1 tbsp corn wheat flour 4 tbsp vegetable oil 2 tbsp white wine 1 tbsp soy sauce 1/2 tsp sugar salt, ground black peppercorn to taste parsley greens | Directions: Mince flounder, add corn flour, egg yolks, half of the butter, wine and beaten egg whites with sugar. Season with salt, stir. Shape a big flat fish cake, put it on a strongly heated greased frying pan and fry on both sides until golden.
Cool, cut into strips. Serve with soy sauce. Garnish with greens. |
