Wash beef leg, cut, add water 1:3 and boil for 2-3 hours over low heat.
Take the leg off the bouillon, separate bones from meat, grind the meat, put in the bouillon and boil for 15-20 minutes over low heat.
Pour the bouillon with ground meat in a square mold for aspic. Add cut onion, garlic, mushrooms and egg, season with salt, pepper and cool until sets.
Unmold the aspic before serving, cut into pieces and top with greens. Serve soy sauce separately.
