1/2 cup rice
1/2 lb (250 gm) beef, fried or boiled
1 whole orange and 1 orange juice
1 tbsp lemon juice
salt to taste
lettuce
parsley greens
1 egg yolk
1 tsp sugar
1 tsp mustard
1 tsp 6% vinegar
1 tbsp vegetable oil
1 tbsp corn wheat flour
Directions:
Wash the rice, boil and cast into colander.

Dice the beef fillet.

Peel orange and divide into segments, peel the pellicles.

Mix the prepared products, add salt and sprinkle with lemon juice.

To make sauce beat egg yolk, mustard and vinegar together, add vegetable oil gradually. Mix orange juice with water (1:2). Dilute flour in the orange-water mix, add sugar and salt, bring to a boil and pour in the sauce stirring.

Serve the salad cool, put on a dish over the lettuce leaves. Decorate with greens.

Serve the sauce separately.
