Peel avocado, pit, slice.
To prepare marinade, chop schalotte, slice garlic, combine, add wine, mint, salt, pepper and stir up.
Cover avocado with prepared marinade, leave for 12 hours, then take avocado out and dry.
When serving, place avocado slices on a platter and top with greens.
If desired, serve the avocado with baked mutton.
