Products Needed:
2 cucumbers 2 tomatoeses 2 oz (50 gm) spring onion 2 oz (50 gm) spinach 3 tbsp red or black currants 3 1/2 oz (100 gm) cheese parsley greens 4 tbsp vegetable oil 2 tbsp lemon juice 1 clove garlic 1/2 tsp salt

Directions: Dice cucumbers, tomatoes and cheese. Shred spring onion and spinach finely. Combine the prepared products and currants.
To make dressing, mix vegetable oil with lemon juice, salt and chopped garlic.
Pour the salad with the dressing before serving and garnish with greens.
