Cut meat into 4 parts, beat, salt, pepper, cover with flour and fry in a part of butter.
Cook potatoes, cut into dices, mix with minced bacon, dress with salt, pepper, nutmeg, add greens, chopped eggs and sour cream. Put prepared mixture on the entrecotes, fold in halves and stick with picks.
Shred onion and fry in butter. Put over prepared entrecotes, pour with wine, cover with a lid and stew until done. Then filter the sauce.
When serving, pour the entrecotes with the sauce.
