Bring 1 cup of water to a boil, add butter, salt, nutmeg and stir in flour gradually. Mix the mass over a low heat hastily to smoothen crumbs, remove from heat and cool to 175
oF (80
oC). Add eggs one by one stirring each time thoroughly. At the end of the kneading add 2/3 of cheese and stir again.
Put the dough in portions on covered with wax paper baking tray, sprinkle with cheese and bake in preheated to 360oF (180oC) oven for 30 minutes.
