1 lb forcemeat
2 tbsp chopped onion
1/2 tbsp chopped garlic
1 tbsp chopped parsley greens
1 tbsp chopped mint leaves
3 eggs
1/2 cup cooked rice
4 cups chicken broth
3 tbsp lemon juice
salt, ground black pepper to taste
Directions:
Mix forcemeat with onion, garlic, greens, egg yolks, rice, salt and pepper.

Shape 24 quenelles and stew in stock for 20 minutes. Take out prepared quenelles.

Whisk egg whites with lemon juice, mix with hot stock. Put the quenelles in the mixture and cook through.

When serving, season the quenelles with chopped greens.
