Sautee onion in oil, add forcemeat. Fry until done.
Soak bread in water, mix with forcemeat, egg, chopped brynza, parsley greens, salt and pepper.
Roll out the dough, put the stuffing on the center, turn the dough edges to the center, make a roll. Brush with egg yolk, make some docks, season with cheese and bake until golden crusts.
Cut prepared shtrudel into portion pieces, top with greens.
