Cut meat into thin slices, salt and pepper it, roll in starch and fry in vegetable oil.
Put the fried meat in a pan, add sauerkraut, onion cut into circles, season with sugar, salt and vinegar if desired. Stir and stew for 40 minutes. Then add stock, bring to a boil and cook for 2-3 minutes.
Serve hot, sprinkle with cut greens.
