1 3/4 oz (50 g) bread, without crust 1 1/2 lb (700 g) fresh tomatoeses 1 fresh cucumber 1/2 cup mayonnaise 3 tbsp 3% vinegar 2 tbsp onion, ground 1 tbsp parsley greens, chopped a dash sugar red peppercorn, ground salt ice cubes | Directions: Scald tomatoes with hot water and peel. Mix 1 tomato with bread and force through a strainer or mince in kitchen processor. Dress with mayonnaise diluted with vinegar, mix with ½ quart (1/2 liter) water, add sugar, salt, pepper and ground onion.
Blend the rest tomatoes and peeled cucumber without seeds with the mass.
Serve with ice cubes and parsley greens. |
