Clean cauliflower, cook in salted water, cast in a colander, cool and break into florets.
Dissolve butter with milk, mix with whisked yolks, minced ham, anchovies and minced veal brains. Stir well up and add sour cream.
Put cooked cauliflower in greased heatproof pan, pour with prepared sauce, season with grated cheese and bake in oven for 45 minutes.
