Bring 1 cup water together with butter and salt. Add flour, mixed with starch, poach/ stirring constantly, until the mass comes off the pan’s sides.
Cool the dough slightly, add egg, a portion of grated cheese and baking powder. Beat the dough until it comes off slowly from the whisk.
Spoon the dough on a greased baking tray, shaping wreath, sprinkle with grated cheese and bake in an oven at 390oF (200oC) for 20 minutes, reduce heat to 340oF (170oC) and bake for 20 minutes.
Serve hot, garnish with lettuce.
