Dissolve gelatin in boiled and cooled water.
Cut a melon into halves and remove seeds. Carve balls out of the melon flesh or cut it into cubes.
Bring water together with sugar to a boil. Cool.
Strain the dissolved gelatin, blend with sugar syrup and bring to a boil. Add wine and lemon juice, cool but do not let congeal.
Put melon balls in ramekins and cover with gelatin mix. Refrigerate to let the jelly set.
