Spread the bread slices with butter, put lettuce leafs over.
Chop chicken fillets lightly, add wine and little water , bring to boil and simmer over very low heat until soft. Cool.
Skin the fillets, slice the flesh finely, season with salt and put the fillets on the lettuce.
Scald peaches, take skin off, halve them, remove stones, slice the peaches and put over the fillets.
Decorate the sandwiches with mayonnaise, piping it like lettice or any other drawing, top with greens.
