Sort out spinach or beet, rinse, boil, throw on a colander, cool, press and drain excess liquid.
Dice peeled onions, sauté, and fry with boiled spinach for 5 minutes.
Chop greens finely, salt, pepper, stir in 2 whipped eggs and the spinach paste. Cover with the rest of beaten eggs, and cook lidded until ready to serve.
