1 lb (500 g) mutton fillet
2 tbsp fat fat
1 tbsp cracked rice
3 onions
coriander and parsley greens, chopped
red peppercorn, ground
salt
a dash of saffron
Directions:
Cut washed meat in chunks 1–1 1/3 oz (30-40 gm) weight, pour with 10 cups of water, bring to a boil. Skim foam and boil for 30 minutes. Add chopped onion, washed rice and cook over low heat until ready. 10 minutes before the end of the cooking season the soup with salt, pepper, saffron, chopped coriander and parsley greens . Top with chopped greens when serving.
