Melt 1 teaspoon of butter and fry finely cut bacon and the whole small onions. Take them out in a separate bowl and fry in the same oil washed and dried veal kidneys.
Fry the peeled potato until it is half-ready (without crusting) in butter. Add some water if needed.
Mix fried bacon small onion and potato with fried veal kidneys, add salt and ground pepper. Put the mass into pots and bake uncovered in an oven until it is ready. Add some water or clear soup if needed.
When the dish is nearly ready, add mashed juniper berries and 5 minutes later add cognac or gin.
Serve the dish in pots, decorating with parsley and dill greens.
