1 1/3 pound (600 grams) fresh spratfillet
4.2 oz (120 grams) wheat bread
1.8 oz (50 grams) butter
1 tbsp vegetable oil
1 tbsp wheat flour
1-2 eggs
1-2 onions
1 lemon zest
dill greens
ground black peppercornand salt to taste
1 oz (30 grams) crushed crackers
Directions:
Mince the fresh sprat fillet twice. Add wheat bread, egg yolks, butter, and chopped onion, salt, peel of 1 lemon and ground black pepper. Stir it finely and add beaten egg whites.

Put the mass in form of a breadstick; roll it in flour and sprinkle with the vegetable oil. Put the roll on a baking tray; cover it with crushed crackers and bake in an oven.

Serve the dish with green peas in milk sauce.
