Beat the egg whites stiffly; add a portion of sugar and lemon juice. Add accurately egg yolks one by one and salt. Stir the mass and put in a heated buttered frying pan. Make two omelettes in a covered pan, frying each for 10 minutes. Turn them on a plate.
Wash fresh berries (raspberry, strawberry, bilberry) and pour the water out.
Melt the rest of the butter with sugar in a frying pan, bring to a boil, add the berries, warm them and put on the one half of the omelette, fold the other and serve.
