Products Needed:
1.3 lb for dough and 2 tbsp for filling wheat flour 1 egg for dough and 2 for filling 1 cup milk or water 1 tbsp sugar and 5 tbsp for filling 1 tsp salt and some for filling 1.8 lb cottage cheese 2 tbsp butter for filling 1 cup sour cream for serving

Directions: Dissolve salt and sugar in cold water or milk, add an egg, whip, add flour, stirring constantly. Knead stiff dough, wrap it with some cloth and let stay so for 30 minutes.
For the filling, force cottage cheese through a sieve, add eggs, sugar, flour, salt and melted butter. Stir the paste well.
Roll out dough thinly, cut out circles, put a tea-spoon of the filling on each, and pinch the edges. Shape vareniks in half-moons.
Dip vareniks into boiling salted water and boil until they come to the surface. Take vareniks out with a skimmer, put into a dish, add some butter so that they don’t stick together. Serve immediately with sour cream or fruit syrup.
