2 lb. flesh mutton
3 cups rice
1 cup melted butter
1/3 lb. onion
1/4 lb. sultanas
1/4 lb. chestnuts
1/6 lb. dried cornel
1 egg
3 tbsp. wheat flour
cinnamon ground to taste
saffron to taste
black pepper ground
salt
Directions:
Mince mutton fillet and onion, salt, pepper and fry in a part of butter. Mix cornel and raisins with cooked and peeled chestnuts, fry in butter and mix with the forcemeat.

Cook crumbly rice, color with saffron infusion. Knead the dough of flour and eggs. Grease a mold, put dough flat cake on the bottom, scatter over rice, bake in oven.

Arrange the flat cake with rice on a platter, pour with butter, put the meat around, season with cinnamon.
