1 1/5 pound (550 g) horseradish root root
2 cups water, boiling
1 cup 9% vinegar
2 tsp sugar
2 tsp salt
Directions:
Yield 2.2 pound (1 kg)

Peel horseradish root and grate it. Add boiling water, cool and add sugar, salt and vinegar.

Grate horseradish root in the open air for its essential oils not to irritate your eyes. To soften the taste of this sauce, add sour cream.
