Stem, seed and shred the sweet peppers, dice the cucumbers, slice 2 tomatoes and the eggs. Scald the remaining tomatoes and put quickly into cold water, peel and halve. Remove the seeds and chop the pulp.
Mix the mayonnaise with the mustard, add the chopped tomatoes and salt, blend with a mixer.
Combine the vegetables and eggs, top with the dressing. Do not toss.
Before serving garnish with the greens.
