Products Needed:
½ lb (250 g) pumpkin 2-3 tomatoeses 1 salted cucumber 1 onion 1 oz (20 g) parsley greens 1 oz (20 g) spring onions 4 tbsp vegetable oil 1 tbsp 3% vinegar salt ground red ground pepper

Directions: Peel, seed and shred the pumpkin, combine with the diced cucumber, tomatoes, onion and chopped greens. Dress with the oil, mixed with the vinegar, salt and pepper.
Before serving sprinkle the salad with chopped spring onions.
