Peel and dice fine the potatoes, add thinly sliced ham and sausage, diced cucumbers, eggs and onion. Dress with lemon juice, oil, salt and pepper mixture.

Put the salad in a bowl and coat with the mayonnaise. Garnish with parsley greens.
